Chunky Wedges
SERVES 4
• 200g carrots, peeled and cut into wedges
• 200g swede, peeled and cut into wedges
• 1 tbs. (15ml) olive oil
• ½ tsp. ground coriander
Preheat oven to 180°C. Place carrot and swede in a saucepan. Cover with cold water. Bring to the boil, then cook, partially covered, for 10 minutes or until almost tender. Drain. Combine vegetable wedges, with oil and coriander in a baking dish. Toss to coat. Bake for 15 minutes or until golden.
Optional: This is really nice made with potatoes and sweet potato (kumara) too.
Tip: Serve with a spiced sour cream by mixing a little sour cream, yoghurt, chilli flakes and lemon zest together.
